Skype is probably the best solution for cross platform video conferencing at the moment. Make sure you enable port forwarding for your skype port on your router – makes a difference in call quality.
Regarding video in Google Talk – keep an eye on Marratech – Google bought them a few months back – we can assume their video conferencing tech will make it’s way into Google Talk.
